"In France, bistro service and food evolved out of necessity," explains Philippe Jeanty. "The bistro was a place for good food where price was kept low with dishes prepared ahead of time that utilized cheaper cuts of meat. The plates I choose for Bistro Jeanty must fit the homey atmosphere, and they don't all have to match each other. First I start with an idea for a dish and then I think about the most interesting presentation. For example, the bowl holding the soupe de poisson (pictured left) was made by a local artist (Kathy Kearns)." |
