Rhubarb Pudding Can Crockett Pottery be used in the oven? You bet! We enjoyed this tasty rhubarb pudding on the 4th of July. It looked soooo beautiful, with the pink rhubarb bubbling a bit through the crust and complementing the color and fluting on the baking dish. Here is the recipe: Butter a baking dish,(from Crockett Pottery of course!) put in 4 cups finely cut rhubarb, 1cup sugar. Sprinkle a little nutmeg and cinnamon and dot with butter.
Make a batter of 1 cup sugar, a little salt, 1 cup sour cream, 1 tsp. baking powder, 2 cups flour, 2 well beaten eggs, 1/2 tsp. baking soda (which has been dissolved in a little hot water.) Pour over rhubarb and bake in 375 degree oven for 25 minutes or until done. (Recipe from Rock Island Country Selected Recipes.)
