My cassoulet bowls are made from a sturdy red clay and are glazed on the inside with a food safe glaze. They can be used in a hot oven up to 450 degrees, and are microwave and dishwasher safe. Do not use on a stovetop; direct heat from one direction may cause breakage.  At Bistro Jeanty and the Ledford House the pre-cooked beans and other ingredients are assembled in individual cassoulet bowls, baked until the top is brown and bubbly, then taken directly to the table. As in all of my work, cassoulet bowls are made one at a time by hand, and small variations occur.
